In Oregon grape growers have planted vines at the same level as the ocean to higher than 3,000 feet in elevation.

Elevation plays a big role in the taste of wine grapes. The higher the elevation, the cooler the climate. This means the grapes have a longer growing season and produce more sugar. They also have more acidity and often express more balanced fruit.

Temperatures in high-altitude areas vary significantly at night and day, which is known as diurnal temperature swings. To give a specific location its personality, the vine roots have to dig deeply into the soil and remove minerals that are specific to it. And this daily temperature swing helps the vines both grow and establish themselves over time.

But it doesn't just have to be grown at high elevation to impact the wine, wine grapes are also grown on hills for many reasons. The most important reason is that the hillside vineyards provide good drainage for the grapevines and grapevines need well-drained soil to grow well. Hillside vineyards also provide protection from the wind, and good sun exposure for the grapevines.
